Wintertime BBQ

We had a few days with temperatures in the 60 degrees range, so it was time to have a wintertime BBQ.

The only issue is that the sun goes down early before the BBQ is done but if, you plan it right, you can finish up in time.

Preparing the Chicken Breasts

The first thing to do is to prepare the chicken breasts. I use boneless and skinless chicken breasts. I have a large mallet which I use to the pound the chicken breasts out with. The thinner the breasts are, the quicker they finish cooking.

Then, I brush the chicken breasts with a combination of olive oil and imported balsamic vinegar from Modena.

Setting Up the BBQ

It takes about 20 minutes to get BBQ coals hot enough to use. I always use a chimney fire starter which only needs a couple pieces of newspaper to lite.

I generally fill the fire chimney to the top with charcoal pieces.

At this point the coals are getting hot.

Using a BBQ mitt turn the fire chimney over into the BBQ when the coals are white hot.

Finishing the Meal

While the meal is cooking, I went in the house to put some frozen corn on the stove. I also added a premade salad to the meal. I use aluminum foil on my BBQ grilling surface to keep the meat clean.

As the sun goes down, and I am finishing up the grilling. Some people were a little late, so I kept the meal warm by moving the chicken breasts to the edges of the grill.

So the meal turned out great and everyone enjoyed the BBQ meal in January.
