Easy Leek and Parmesan Cheese Quiche Recipe

I made an easy leek and Parmesan cheese quiche this morning.

Everyone loves warm quiche for breakfast!

This recipe allows you to adjust the ingredients and use up what you have in the house. 

You can also make it easier on the calories by modifying the milk and cream ratio.

Ingredients for Leek and Parmesan Cheese Quiche

  • Pre-made 9-inch Pie Crust
  • 1 to 2 Cups of Leeks (or vegetables, ham, bacon, or a combination of additives)
  • 2 Tablespoons of Butter
  • 5 Large Eggs
  • 1 Cup of Heavy Cream (or a Combination of Milk and Cream)
  • 1 to 2 Cups of Parmesan or other type of Shredded Cheese
  • Dash of Salt

Instructions for Making Quiche

The first step is to cut two leeks lengthwise and thoroughly wash with cold water.

Dice the two leeks tossing out the dark green tops.  Add the diced leeks to a pan with about two tablespoons of butter and cook until tender. 

This should take about 15 minutes.  I, also, added a few mushrooms at this point but you can add other vegetables.

Break five large eggs in a bowl and whisk for about a minute or two.

Add half a cup of cream and half a cup of milk to the mixture along with the Parmesan cheese, and continue to whisk.

To keep the calories low, I add only a half cup of grated Parmesan cheese into the cream/milk and egg mixture but generally you add up to one to two cups of grated cheese.

You can also add a dash of salt at this point but I rarely use salt.

Baked the prepared pie crust in a 350 degree over for about 15 minutes.

Remove the pie crust from the oven.  Spread the cooked leeks evenly over the bottom of the pie pan.

Pour the egg, milk, cream, salt and Parmesan cheese mixture over the leeks.

The above photograph is what your quiche should look like before going into the oven.

I decorated the top of my quiche with a few sprigs of cilantro in the center.  I then sprinkled dried parsley, dill, and paprika evenly over the top of the quiche.

Bake in a 350 degree oven for about 30 to 40 minutes until done.  The edges of the quiche should be nicely brown.
