Make Your Own Tacos Night

Everyone enjoys a freshly made taco.

I notice that some of the supermarkets around here sell take home taco kits.  They make the taco meat sauce and cut up all the ingredients for you.

I do my own version of the “make your taco” kit.  I like to put all the fixings on a large dish so everyone can help themselves.

Today I chopped up fresh lettuce, tomatoes, red onion, and black olives.  I served the soft shell tacos with some freshly grated cheddar cheese.

I never use iceberg lettuce but prefer the mixed types of lettuces.

I decided to use up some of the frozen tomatoes from last year’s crop.

This taco meat sauce is full of fresh vegetables and spices.

Don’t forget to add a dash or two of sugar.  That will cut the acid taste from the fresh tomatoes.

Ingredients for Taco Meat Sauce

  • 2 Tomatoes
  • 16 oz. of Ground Beef Chuck
  • 2 Tablespoons of Catsup
  • 1 Tablespoon of Dry Parsley
  • 1/4 Cup of Red Chopped Onion
  • 1/4 Cup of Red Peppers
  • 1 Garlic Clove
  • Dash Pepper
  • 1/4 Teaspoon of Chili Powder
  • Dash of Sugar
  • 1/4 Teaspoon of Soy Sauce
  • 1 Teaspoon of Better than Bullion Beef Stock
  • Soft Taco Shells

Directions

  1. Brown grown beef in a large pan, drain fat from pan.
  2. Add tomatoes, catsup, parsley, red onion, red peppers, garlic, pepper, chili powder, sugar, soy sauce and Better than Bouillon Beef Stock.
  3. Using a potato masher, mash up tomatoes.
  4. Simmer until tomatoes are well cooked and soft.  The flavors should melt together.
  5. Serve meat filling with soft taco shells and taco fixings.

I like to serve my tacos with brown instant rice made with chicken stock instead of water and ice tea.

  1. I just looked up taco recipes a couple of days ago, and now here is a good, easy one when I found your website! We usually buy tacos from a Mexican restaurant, but by the time I get them home, they are just not warm & crisp any more.
