How to Make Delicious Belgian Waffles – A Meatless Meal during COVID-19 Meat Shortages Times

Today at Farmhouse Magic Blog we are making light and crispy Belgian waffles.  Belgian waffles are a pretty good meal if you need to go meatless due to the COVID-19 meat shortages.

You will need a waffle maker for this recipe.  I use this round waffle maker I purchased in Williams-Sonoma.  It is very small and fits easily into my kitchen.  It is just the right size for my family.

First I gather my ingredients–waffle mix, two eggs, vegetable oil and water.

We are ready to start.

Waffle Tip:  Now is the time to plug in your waffle iron.

You will need to warm it up before pouring on the batter.

Measure out the required amount of Belgian Waffle mix.  Then add the eggs, water, and vegetable oil.

I’m not going to give you exact amounts of each since it depends on how many Belgian waffles you would like to make.

I use a wire whisk to mix the ingredients until the batter is smooth.

The next step is very important.  You will need to let the batter rest in the bowl for about two minutes.

During this time you should see some bubbles form on the top of the batter.

Belgian Waffle Tip:  If you skip this step, you will not get fluffy waffles.

Slowly pour the Belgian waffle mix in the center of the hot waffler maker and work your way to the edges.

I hate it when I pour too much waffle mix in the waffle maker, then when I close the lid the batter comes out at the sides. 

When this happens you have added too much waffle mix so add less batter on your next waffle.

Close the lid and cook waffles until light brown and crispy.

Serve your waffles with butter, syrup, whipped cream, fresh strawberries or even peanut butter.  I sometimes peel and cut up apple slices and cook them for a bit in butter, a little sugar and cinnamon.

Immediately clean your whisk in hot soapy water and rinse. 

If the batter dries on the whisk, it is difficult to remove.

This way, the whisk is clean and ready to be used again.

I had a tuna salad and the lettuce was delightful and fresh. 

Home grown lettuce is always the best!
