Easy Buttermilk Cinnamon Cake

It comes together in a snap and makes a special dessert even when you are pressed for time.

Cooking Tips

To make the Easy Buttermilk Cinnamon Cake, you need to add two extra tablespoon of buttermilk because buttermilk is thicker than water.

Be sure to give your buttermilk a quick shake in the container before you use it.

If you like cinnamon, you can give the batter an extra dash.

Ingredients for the Easy Buttermilk Cinnamon Cake

  • 1 Boxed Yellow Cake Mix, 15.25 ounce box, (I used one which stated it was a super moist mix).
  • 1 Cup of Buttermilk plus 2 tablespoons extra
  • 1/3 Cup of Butter, at room temperature
  • 3 Eggs
  • 1/2 Teaspoon of Cinnamon
  • 1/4 Teaspoon of Nutmeg

Directions

  1. Preheat oven to 350 degrees F for shiny metal or glass pans or 325 degrees F for darken pans. Grease bottom and sides of pan and/or cut a piece of wax paper to fit the bottom of the pan. Lining the cake pan with wax paper prevents the cake from sticking to the bottom of the pan.
  2. Mix cake mix, buttermilk plus the two extra tablespoon of buttermilk, butter, cinnamon, nutmeg and eggs in a large bowl for about two minutes. Pour evenly into the prepared pans.
  3. Bake until the cake top is lightly brown and a toothpick inserted in the middle of the cake comes out clean. Run a knife around the edges of the pan before you remove it. When cake is completely cool, apply the icing.

Be sure to pull this off prior to frosting the cake.

Cake Pan Choice

I used a 10-inch pan for the Buttermilk Cinnamon Cake but the pan was too large. Using 8 or 9-inch cake pans would have been a better choice.

If you look closely, you will see the specks of cinnamon and nutmeg in the cake.

Ingredients for Easy Icing

  • 1/3 Cup of Shortening, (I used Crisco)
  • 1/3 Cup of Butter, at room temperature
  • 2 Tablespoons of Half and Half
  • 3 Cups of Powdered Sugar

Directions

  1. Beat together shorting and butter until fluffy.
  2. Add Powdered Sugar and Half and Half mix until smooth. If icing is too thick, add a little more half and half.
