Baked Yam Fries with Herbs

This easy recipe is for baked yam fries with herbs.

The fries work great with hamburgers and are more nutritious than regular French fried potatoes.

The fresh thyme adds a dash of freshness to the taste.

Ingredients

  • Two to Three Large Yams
  • 1/2 Red Onion, Chopped
  • 3 Green Spring Onions, Thinly Sliced
  • 1/4 Teaspoon of Pepper
  • Handful of Fresh Thyme
  • 1 Tablespoon of Dried Parsley
  • 2-3 Tablespoon of Olive Oil
  • 2 Pinches of Salt

Instructions

  1. Preheat oven to 400 degrees.
  2. Wash and peel yams
  3. Slice yams into chunky slices.
  4. Chop red onion.
  5. Chop spring onions including white tops.
  6. Mix yams, red onion, spring onions with fresh thyme, parsley, salt and pepper.  Add oil olive, mix until all pieces are evenly coated.
  7. Place yam slices evenly on a cookie sheet coated with nonstick spray.  Bake for approximately 35 to 45 minutes until edges of yams are brown and crispy.  Makes about three to four servings depending of size of yams.  Stir once halfway through the cooking cycle.
