Thanksgiving Joy

Thanksgiving Joy is the feeling you get when you see the table is graciously set, the turkey and side dishes are ready, and you are sitting down to a delicious meal.

Because of the holiday, I want to share a few photographs from our special Thanksgiving 2022 meal.

Thanksgiving Joy Table Setting

To begin with, the table is set with a plain white tablecloth. A fall colored table running is placed lengthwise down the center of the table. Large black and white buffalo check napkins are used with white ceramic napkin rings.

In the back yard, I cut some boxwood clippings and herbs for garnishing the Thanksgiving Joy candle sticks and dinner plates.

Then, two large decorative glass pumpkins are placed at the head of the table. Smaller pumpkins, a glass turkey, and four small LED candles are added. The Thanksgiving joy look is complete with a scattering of silk fall leaves.

Apple Pie and Pumpkin Mousse Dessert

The delicious homemade apple pie is served with a scoop of pumpkin mousse. For a fun look, an orange marshmallow pumpkin is added to the plate along with black and orange sprinkles.

In other words, simple yet yummy dessert!

Pumpkin Mousse Recipe

Ingredients

  • Heavy Cream, 1/2 cup, cold
  • Cream Cheese, 8-ounce package, cold cut into cubes
  • Pumpkin Puree, canned, 1 cup
  • Light Brown Sugar, 1/3 cup
  • Ground Ginger, 3/4 teaspoon
  • Ground Cinnamon, 1/2 teaspoon
  • Nutmeg, 1/4 teaspoon

Directions

  1. With a chilled bowl and beaters, whip cream on medium-high speed until soft peaks form. Cover with plastic wrap and refrigerate.
  2. Put the cold cream cheese chunks in a blender.
  3. In a skillet over medium-high heat, boil the pumpkin puree for one minute. Continue to cook until it turns a darker shade or approximately five minutes.
  4. Add pumpkin to blender along with the brown sugar, ginger, cinnamon, and nutmeg. Blend until smooth. Transfer to a bowl and refrigerate for several minutes.
  5. Fold in the pumpkin mixture into the whipped cream. Keep cold until ready to serve. Keeps for about one day in the refrigerator.

Stir the pumpkin puree often so it does not burn.

Thanksgiving Joy Harvest Apron

Because I tend to get food or water on my clothing when I cook, many times I wear an apron.

The pockets on this apron are extra large for holding those recipe cards, cooking spoons, etc.

This is my harvest apron that I like to wear when serving the Thanksgiving meal.
