Because these cookies are made with special dark unsweetened cocoa, they are not as sweet as regular cookies.
These special dark chocolate kiss cookies freeze well for later use.
Ingredients
- 1 Cup of Flour
- 1/3 Cup of Special Dark Baking Cocoa, (I used Hershey’s unsweetened brand)
- 1 Teaspoon of Baking Soda
- 1/2 Cup of Butter, soften to room temperature
- 1/3 Cup of Light Brown Sugar
- 2/3 Cup of Granulated White Sugar
- 1 Egg Yolk
- 1/2 Teaspoon of Vanilla Extract
- Unwrapped Chocolate Hershey Kisses
- Approximately 1/4 Cup of White Granulated Sugar to Roll Cookie Dough Balls in to coat
Directions
- Combine flour, special dark baking cocoa, and baking power in a bowl.
- In a medium size bowl beat butter until light and creamy. Add the white sugar and light brown sugar. Add vanilla extract and egg yolk.
- Gradually add the flour, baking soda, and baking cocoa mixture on a slow speed. Mix well.
- Cover bowl with plastic wrap and refrigerate for one hour.
- Remove bowl from refrigerator and roll into one-inch size balls. Roll the balls in granulated sugar and place of a parchment lined baking sheet.
- Slightly push down on each cookie with the bottom of a glass or the palm of your hand.
- Bake in a 350 degree oven for approximately 10 to 12 minutes. Remove from oven and immediately press a chocolate kiss into the center of each cookie.
- Cool and remove from baking tray.
While cookies are cooling be careful not to touch the chocolate kiss as it is pretty soft at this point.
To quick cool place a small tray of cookies in the refrigerator for a few minutes.
Enjoy cookies with coffee, tea or milk.
