Pork Loin Roast with Golden Baby Potatoes Recipe

It a chilly day so it is a good day to make a nice pork loin roast with golden baby potatoes.

I actually prefer plain pork roasts which haven’t been marinated in the packaging.  To me I think store marinated meats tend to be a little salty tasting.

As you bake your pork roast dinner, delicious smells will scent the kitchen and entice the family to the dinner table.

 

Ingredients

  • 4-Pound Plain Pork Loin Roast
  • Golden Baby Potatoes
  • 2 to 3 Tablespoons of Olive Oil
  • 2 to 3 minced Garlic Cloves
  • Pepper
  • Garlic Salt
  • Onion Salt – I use a blend which contains dry green onions

Directions for Making Pork Loin Roast with Golden Baby Potatoes

  1. Place pork loin in a large roasting pan which has been sprayed with nonstick spray.
  2. Rub the pork loin roast with olive oil.  Season with pepper, garlic, garlic salt and onion salt.
  3. Place pork loin Fat Side Up in the roasting pan.  This will keep your pork loin moist during the roasting as the fat will drip down and season the lean meat.  Place the golden baby potatoes around the meat.
  4. Preheat oven to 400 degree and bake pork loin for ten minutes to give the roast a crispy crust.
  5. Then turn down temperature to 350 degrees and bake for 20 minutes per pound.  If needed, check the roast with meat thermometer to make sure it’s done.
