New Orleans’ Shrimp Salad

This New Year’s posting is about a New Orleans’ Shrimp Salad which was served last night at a New Year’s Party. Today our dear friend shares her recipe with our Readers.

So, I like the fact that this recipe is easy to make, comes together quickly, and looks great on the buffet table.

The recipe uses approximate amounts so you can adjust the ingredients to your liking and dietary concerns.

New Orleans’ Shrimp Salad Recipe

Ingredients

  • Two Types of Finely Shredded Lettuce. Today’s recipe photograph uses red and iceberg lettuce, but any two varieties of lettuce will work
  • Fresh Large Shrimp (approximately 25 to 40 Shrimp)
  • New Orleans Crab Boil, (Old Bay Seasoning)
  • Finely Minced Onion, approximately one
  • Hard Boiled Eggs, chopped (approximately 5 eggs)
  • Finely Minced Cilantro and Parsley, to taste
  • Mayonnaise, one or two tablespoons, (can substitute low-calorie or lite Mayonnaise)

Directions

  1. Bring water to boil, add New Orleans‘ crab boil, (Old Bay Seasoning), and make as directed on the package. Add fresh shrimp and cook for about one to two minutes. The shrimp are done when they turn pink. Remove from water and cool.
  2. When shrimp are cool add the two types of shredded salad, onion, hard boiled eggs, cilantro, parsley and mayonnaise. Toss lightly together so shrimp do not break.
  3. Refrigerate until cold, serve with crackers.
