Holiday Pot Luck
Today the volunteers got together for their annual holiday pot luck meal. Everyone looks forward to this event by bringing a favorite dish or dessert.
I decided to bring two dishes; my deviled eggs and Easy Puff Pastry Herb Rolls. The herb rolls were served with herb butter.
Below is the recipe for the Easy Puff Pastry Herb Rolls. Don’t forget to take the puff pastry out of the freezer the night before.
I like to serve these rolls with herb butter made with fresh herbs.
- 2 Sheets of Puff Pastry thawed overnight in the refrigerator
- 4 Tablespoons of Butter, melted then cooled
- 2 Tablespoon of Parmesan Cheese
- 2 Tablespoons of Herb Mixture of Dried Parsley and Dill
- 1 Large Egg
- 1 Tablespoon of Water
- Poppy Seeds and Sesame Seeds
- All-Purpose Flour for the Work Surface
- **Parchment Paper needed for lining the baking sheets.
- Prepare two baking sheets by lining them with a piece of parchment paper. Preheat over to 400 Degrees F.
- Working quickly, on a floured surface roll out the puff pastry sheet into a flat rectangle. It is best to only work with one sheet at a time.
- With the cooled melted butter, brush each puff sheet to the edges. Sprinkle each pastry sheet with one tablespoon of parmesan cheese. Divide the dried parsley and dill mixture and sprinkle evenly over each sheet.
- Roll each long side to the middle of the puff pastry. It should resemble two mini rolls with a strip of puff pastry between them, (see below photograph).
- Chill the two rolls in the refrigerator for 10 minutes before slicing.
- With a sharp knife, slice the rolls about one inch thick and place on prepared baking sheet. Place about 2 inches apart on the baking sheet.
- Beat the egg and water together with a fork until mixed. Brush each roll top with the egg wash mixture and sprinkle with poppy and sesame seeds.
- Bake at a preheated 400 degree F oven for about 15 minutes. The rolls should be brown and puffy looking when done.
The unbaked rolls can also be made ahead and frozen until ready to bake.
To freeze, cut rolls into one inch slices and place on a baking sheet. Freeze and then transfer them to an air tight container or freezer bag. You can freeze them up until three months’ time.
When you want to serve them, preheat oven to 400 Degrees F. Place the frozen herb rolls on a prepared pan. Prepare the egg wash and brush each piece. Sprinkle with sesame and poppy seeds. Bake for about 18 minutes until golden brown and puffy.
For easy pot luck transport, use a cardboard box top. Place plastic wrap around the dishes to keep things clean.
Be sure to add the final garnish of fresh thyme, rosemary or other herb, and a last sprinkle of spices.
Don’t forget the serving utensils.
