Easter Dinner 2023

I’m a day late with my blog posting, but I wanted to share with FMB Readers my Easter 2023 dinner. This year I made the meal healthier by cutting out some starches, fats, sugars and carbohydrates.

So what was on the menu for Easter Dinner 2023?

Since we ate at a later time, for lunch I made an uncured turkey bacon and low fat Mexican cheese quiche. The turkey bacon tasted more like ham than turkey, but it was very good when fried up and added to the quiche.

Before baking the quiche, I sprinkled dried dill and parsley over the top. I also added some fresh cut-up chives from my herb crock “garden”.

The turkey bacon and low fat Mexican cheese quiche is right out of the oven.

For the afternoon meal, first, I baked a large approximately 9 1/2 pound ham. This ham has a bone in it so it looks like more ham than you actually get. It was precooked so I only had to warm it up a couple of hours in the oven at a low 325 degrees.

While the ham was baking, I made some deviled eggs and a fresh relish dish.

After taking the ham out of the oven, I quickly made a Meyer Lemon Loaf Cake with a drizzling of lemon icing and some Cheddar Bay Biscuits.

The loaf cake was out of a box but it was very moist and was just the right amount of dessert–not too heavy. Because, I decided not to serve an iced cake, I thought this was a healthier choice.

I then sliced the cake in servicing sizes and added some cute yellow marshmallow candy chicks to the serving platter.

The Meyer Lemon Cake Loaf is served with yellow chick marshmallow candy. The vintage serving plate has a gold handle.

The Easter 2023 Meal is Served

The Easter table is set up with a green and white table cloth and tea kettle patterned napkins. The centerpieces were baskets of natural colored faux eggs.
