This morning I had some buttermilk and stuck-together brown sugar I wanted to use up, so I decided to make this hearty Cinnamon Buttermilk Coffee Cake.
This is an easy breakfast treat to make if you have company.
Baking Tip: Do not over mix the batter or the cake will become dense.
Cake Batter from the Cinnamon Buttermilk Coffee CakeThe cake batter for the Cinnamon Buttermilk Coffee Cake will have a nice tan shade due to the light brown sugar and cinnamon.
Ingredients
- 2 cups of All-Purpose Flour
- 2 Cups of Firmly Packed Light Brown Sugar
- 1/2 Cup of Butter
- 1/3 Cup of Flour
- 1 Large Egg, Slightly-Beaten
- 1 Cup of Buttermilk
- 1 Teaspoon of Baking Soda
- 1 Teaspoon of Ground Cinnamon
- 1/2 Cup of Chopped Walnuts or Pecans, Optional
Directions
- Heat oven to 350 degrees and spray a 9-inch pan with non-stick spray.
- Stir together the brown sugar and 2 cups of the flour in a large bowl.
- Cut in the butter until it looks like corn meal. Measure 3/4 cup of the mixture and put aside to reserve for the topping.
- Add the extra 1/3 cup of flour to the mixture, blend together.
- Add the egg, buttermilk, cinnamon, and baking soda. Stir until mixture is just blended.
- Pour the batter in to the prepared baking pan.
- Mix the reserved flour/butter/sugar mixture with the walnuts, then, sprinkle the mixture evenly over the top of the batter.
- Bake in a 350 degree over for about 35 to 45 minutes. Use a toothpick to test for doneness.
- Cool cake in pan then cut into pieces. Serve with coffee for a morning pick-me-up.
