While shopping at my local market, I noticed the manager’s special on the Beef Bottom Round Roast. We haven’t had anything like this for awhile, so I purchased one for dinner tonight.
The recipe below has quite a few ingredients, but you can add and subtract to things. For instance, I always like to add at least two to three fresh carrots per person. Everyone loves those tender carrots.
I also use a large stainless steel roasting pan with a lid.
Ingredients
- Beef Bottom Round Roast, approximately 3 pounds
- Red Chopped Onion, chopped, 1 cup
- Garlic Cloves, 3 minced
- Olive Oil, 2 tablespoons
- Beef Stock, 2 1/2 cups
- Better than Bouillon, 1/2 teaspoon
- Wine, 1/2 cup, optional
- Fresh Thyme. 3 springs plus additional for garnish
- Dry Parsley, 1 teaspoon
- Carrots, approximated 8 fresh peeled, cut into large chunks
- Celery, 3 stalks, cut into large chunks
- Small Tomato, one plum size, diced
- Salt and Pepper, to taste
Directions
- Spray roasting pan with lid with non stick spray.
- In a large pan add the red onions and garlic to olive oil, cook about 5 minutes. Add the Beef Bottom Roast and slightly brown each side. When the meat is browned, add the beef stock, Better than Bouillon, and wine. Bring to a boil.
- Preheat oven to 300 degrees F. Place the onions, garlic and Beef Bottom Round Roast with cooking liquid into roasting pan.
- Add fresh thyme, carrots, celery, tomato to the roasting pan. Sprinkle dry parsley over the meat. Cover with lid.
- Bake for approximately 3 hours. When done, the meat is extremely tender and will flake with a fork. Use a meat thermometer to test for doneness if needed.
- Serve on large plate with sprigs of thyme and rosemary. Sprinkle with salt and pepper as needed. The beef stocks usually contains some salt, so taste prior to salting.

I harvested and used a couple of small onions and tomato from my garden for this recipe.
These freshly peels carrots are actually organically grown.

I served this delicious meal with corn on the cob and fresh broccoli, but mashed potatoes would have tasted good too.
The meat and carrots are so tender and tasty.
