Once again, it was lunch time, and I really didn’t know what I was in the mood for. In the spirt of creating something with ingredients I had on hand; I decided to make a pot of easy vegetable cabbage soup.
Easy Vegetable Cabbage Soup Recipe
I pulled out a can of garden vegetable soup and put it in the pot with a little extra water. Then I had some cabbage on hand. So, I thinly sliced about three tablespoons of cabbage and added it to the canned soup. I left the soup boil for about 3-5 minutes. It doesn’t take long for the cabbage to cook.
To serve, I ladled it into a bowl with a sprinkling of grated Fontana cheese which melted slightly on the hot soup.
I checked the label on the soup can and it contains potatoes, carrots, tomato puree, tomatoes, corn, celery, kidney beans and green beans.
Other Additions for Canned Soup
It got me to thinking about the other additions that makes canned soup taste more like homemade. Below are some possible choices.
- Goldfish crackers, oyster crackers or croutons.
- Spices and fresh herbs.
- Grated Cheese
- Pat of Butter
- Milk or Cream; in tomato soup use half milk and half water.
- Sauteed onions
- Left over assorted vegetables.
- Thinly sliced chicken lunch meat, add to chicken soup.
- Thinly sliced green onions.
- Sprinkle crushed potato chips or taco chips.
- Popcorn

A bowl of canned soup is something warm and comforting for lunch. It’s great on its own but when you can add an addition or two to ramp up the flavors or nutritional value it makes it that much better.
