While out shopping, there was a great sale on old fashioned oats so several went into my shopping cart knowing I could always make oatmeal coconut cookies.
Our church was, also, collecting for a food drive, so I donated four of the oatmeal canisters to that.
Food Processed Coconut
Years ago, I remember my neighbor making chocolate chip cookies which had ground coconut flakes in them. So I decided to get out my mini food processor and try the same trick for my oatmeal cookies.
The resulting oatmeal cookies had a hint of fresh coconut in them and were very chewy.

Measure Accurately for Oatmeal Coconut Cookies
To get an accurate reading, use the back of a large spoon to pack the brown sugar in to the measuring cup or use a measuring cup made for dry ingredients.
Ingredients for Oatmeal Coconut Cookies
- 1/2 Cup of Shortening, (I used Earth Balanced Vegan Buttery sticks which has zero grams of trans fat)
- 1/2 Cup of Granulated White Sugar
- 1 Tablespoon of Half and Half, (or milk)
- 1/2 Cup of Light Brown Sugar, firmly packed
- 1 Large Egg
- 1 Teaspoon of Pure Vanilla Extract
- 3/4 Cup of All-Purpose Flour
- 1/4 Teaspoon of Salt
- 1/2 Teaspoon of Baking Soda
- 2 Cups of Old Fashioned Oates
- 1/2 Cup of Sweetened Flaked Coconut
Directions
- Preheat oven to 350 F degrees. Prepare pans by lining them with parchment paper to prevent sticking.
- In a large bowl blend shortening with sugars until fluffy and light colored.
- Add flour, salt, and baking soda, beat well.
- Process the coconut in the food processor until it resembles corn meal.
- Stir the oats and processed coconut into the mixture.
- Drop by rounded tablespoons 2 inches apart. Bake about 13-15 minutes until golden brown.
- Let cookies stand five minutes before removing from baking tray.

Ending Remarks
These tasty cookies are great to pack for lunches or to serve as dessert. They also come together quickly and if you use parchment paper on the baking sheets you will have very little clean up to do.
These chewy cookies are wonderful with a glass of milk. Yum!
