Happy Easter 2025 to all my Farmhouse Magic Blog Readers. I wanted to share with you my Easter meal.

After church and coffee, I had just enough time to dash home and get my spiral cut ham in the oven. As per the package’s instructions, I baked it at a low degree at 275 F. Wow, it turned out nicely and not dry or overbaked. I think I like the lower baking temperature setting.

For sure, I’ll have lots of leftover ham slices which will work nicely for those work lunches or for quick omelets in the morning. For any extra ham, we will freeze it and use it later.

Easter Decorations

Oh Boy, I didn’t start my Easter decorating until this morning. Unfortunately, I didn’t get much done this holiday season. Not to worry, though, I grabbed my bunny wreath for the wall. I covered my cleaned table with two table runners. Then I placed my small baskets on the dining room table. I filled the baskets with faux natural-colored eggs. I purchased the eggs from last summer’s tent sale for a dollar a bag. Two yellow candles were already out, so I lite them for the meal.

And just like that, my holiday decorations are done, and my table is set.

I love the small bag of organic gold potatoes I purchased yesterday. I have already gotten two meals out of them. They mashed up beautifully without a lot of effort with a potato masher. Also, love the deep yellow color, so I only added a couple pats of butter. I made these ahead of time, so I only had to reheat them with a little half and half.

The Steakhouse Salad came out of a kit which included crispy onion pieces and a small amount of cooked bacon. I added some sliced cucumbers around the edge of the serving bowl, plus I used my own dressing.

I’ve been using the same recipe for deviled eggs for a long time. I add a dash of pickle juice from the jar to make the deviled eggs smoother and tasty. However, you must like pickles before you add any juice.

Whoops, looks like I purchased something new! The fork/spoon salad servicer is the something new on my Easter table. I love servicing salad with it, and it was worth the money.

I always make a batch of deviled eggs for the Easter meal. These are garnished with cherry tomatoes and fresh organic thyme.

Sugar Free Strawberry Parfaits – Happy Easter 2025

This is the first time I made sugar free strawberry parfaits for dessert. I, originally, was going to purchase a cake or other dessert at the store. However, the store’s fresh strawberries were too good to resist, and the cakes were expensive.

I first made the gelatin and layered it in the bottom of my vintage glasses. I used sugar free cherry gelatin which states on the box it has 0 grams of carbs and only 5 calories per serving. Note: Another whoops, I was going to buy strawberry gelatin but came home with cherry gelatin. However, not to worry, it came out fine.

All in all, I should have made the gelatin earlier in the day but didn’t. I noted on the package it takes four hours to set. Nope, I don’t have four hours, so I put the glasses first in the fridge, and then in the freezer for about 20 to 30 minutes. If you do this, be careful frozen gelatin tastes different, so you don’t want things to freeze or damage your vintage serving glasses.

Then, I washed and cut up those fresh strawberries.

When I was ready to serve dessert, I pulled the four glasses from the freezer, placed the cut-up strawberries on top along with a dot of fat reduced whipped cream. I garnished each parfait with a fresh strawberry slice and a sprinkling of sugar made with natural colors.

As you can see, I used sugar free gelatin. However, the strawberries, the whipped cream, and the dash of sugar on top are all sugar products. Only the gelatin was truly sugar free.
