Here at Farmhouse Magic Blog we previously blogged about making anything from banana wine to banana bread. I love bananas and never want to toss an overripe banana in the trash.
In the summer, I like to make easy recipes that get me out of the kitchen quickly. I love these easy banana chocolate chip muffins because they are that good. You can also switch out the chcolocate chips and use butterscotch chips for a different flavor.
The easy part of these muffins is that you use vegetable oil instead of butter so there is no creaming together of the sugar and butter.
If you beat the vegetable oil and eggs in the measuring cup, you will save on an extra dish to wash.
Make sure you use cupcake liners so the muffins come out easily.
An electric mixer is not needed for this recipe. The batter comes together quickly. To make the muffins special, add chocolate or butterscotch chips.
Ingredients for Easy Banana Chocolate Chip Muffins
- 1/2 Cup of Vegetable Oil ( I use Canola Oil)
- 2 Large Eggs
- 1/2 Cup of Granulated Sugar
- 1 2/3 Cup of Flour
- 1 Teaspoon of Baking Powder
- 1/2 Teaspoon of Baking Soda
- 2 to 3 Very Ripe Large Bananas
- 1 Scant Cup of Chocolate Chips or Butterscotch Chips
Directions:
- Preheat oven to 400 degrees F. If using a dark colored pan, preheat to 375 degrees F. Line muffin pan with paper liners.
- Measure oil into a glass measuring cup and beat in the eggs.
- Place flour, sugar, baking power and baking soda in a large bowl and mix them together. Then add the oil/egg mixture to large bowl. Mash up ripe bananas with a potato masher and add to mixture. Stir until the batter is well mixed.
- Add chocolate chips or butterscotch chips and fold into batter. Using an ice cream scooper divide the batter evenly between the 12 muffin cups. Bake approximately 20 minutes. The tops of the muffins will be a golden brown color. Makes 12 muffins.
