Today’s blog is on a super moist Cranberry Coffee Cake made with sour cream. This week, I accidentally purchased a container of sour cream instead of cottage cheese.
Let’s see I, also, previously purchased two packages of fresh cranberries. I tossed one of those packages in the freezer for later use. Then, on searching for recipes, I found a recipe for a Cranberry Coffee Cake using both sour cream and fresh cranberries. Of course, I have adjusted the ingredients to make it my own.
This coffee cake is easy to make and would make a great item to serve for your holiday breakfast. The tart cranberries add a nice flavor to the coffee cake. The recipe is as follows:
Ingredients
Streusel Topping
- 1/2 Cup of All-Purpose Flour
- 1/2 Cup of Light Brown Sugar, (packed to measure)
- 1/2 Teaspoon of Ground Cinnamon
- 4 Tablespoons of Butter
Coffee Cake Batter
- 2 Cups of All-Purpose Flour
- 1 1/2 Teaspoons of Baking Power
- 1/2 Teaspoon of Baking Soda
- 1/2 Cup of Butter, at room temperature
- 1 Cup of Granulated sugar
- 2 Large Eggs, at room temperature
- 2 Teaspoons of Vanilla Extract
- 1 Cup of Full-Fat Sour Cream, at room temperature
- 1 1/2 Cups of Fresh Cranberries, washed and picked over
Directions
- Make Streusel – In small bowl mix the flour, brown sugar and cinnamon. Cut the butter into the mixture using a fork or your hands. Mixture will form coarse crumbs. Place the bowl into the refrigerator as you prepare the batter.
2. Make the Cake Batter – In medium bowl mix together the flour, baking powder, baking soda and set aside.
In a large mixing bowl, beat the butter, sugar together until light and fluffy. Add eggs one at a time beating well after each addition. Mix in the vanilla.
Then add half of the flour mixture and mix until just combined. Add sour cream and the remaining flour mixture. Fold in cranberries, don’t over beat.
3. Assembling the Coffee Cake – Grease a 9-inch springform cake pan with butter. Spread cake batter evenly over the bottom of the pan. Sprinkle the streusel mixture evenly over the top.
Bake in a preheated 350-degree oven until inserted toothpick comes clean. About 50 to 60 minutes.

This is a quick recipe and, of course, the red cranberries make the cake look extra festive. Goes great with coffee or tea.
