I made this Chocolate Cocoa Cake recipe I found online. It is advertised as a Tick Tock Chocolate Cake. It really is easy to make and comes together quickly.
However, I changed out a few ingredients. Surprisingly, this cake uses only one cup of flour.
Chocolate Cocoa Cake is a dense, moist chocolate cake which has a chocolate flavor and is not too sweet.
But if you don’t have buttermilk on hand, you can always use one cup of milk with one tablespoon of vinegar stirred into it. Allow it to sit for five minutes before using.
Ingredients for Chocolate Cocoa Cake:
- 1 Cup of Buttermilk
- 3/4 Cup of Canola Oil
- 2 Large Eggs
- 1 Cup of Brown Sugar
- 1/2 Cup of Granulated Sugar
- 1 Cup of Flour
- 3/4 Cup of Unsweetened Baking Cocoa
- 1 Tablespoon of Baking Powder
- 1/2 Teaspoon of Salt
- 2 Tablespoons of Freshly Brewed and Cooled Coffee
Directions:
- Add buttermilk, canola oil, eggs, brown and regular sugars together. Stir with whisk until mixed together.
- Using a flour sifter add flour, baking cocoa, baking powder, salt and mix until smooth.
- Add cooled coffee.
- Pour mixture into a 7-inch springform pan sprayed with nonstick spray.
- Bake in a preheated 320 F. degree oven for approximately 50-55 minutes. Makes one thick layer.
The cake batter has been poured into the pan and is ready to bake.
Make sure to cool your cake before trying to take it out of the springform pan.
Remove carefully using your fingers and a knife. Sometimes the bottom sticks a bit.

It is garnished with fresh thyme and rosemary herbs and a sprinkling of powdered sugar. It would have, also, looked nice with a few raspberries sprinkled about.
