Carrageen-Moss or Seaweed Pudding

Recently, I was reading a fictional book entitled, “A Week in Winter” printed in 2012.  When the author mentioned making Carrageen-Moss pudding I became instantly intrigued.

I investigated this a little further and found that Carrageen is not really a moss but actually is a special type of seaweed. 

Carrageen sea weed is red-brown in color and grows off the south and west coasts of Ireland.

At one time it was used as a thickener in puddings and also in toothpaste.

So did I find a specialty store carrying this unusual food product and whip up a batch of the pudding for today’s blog photograph?

Is Carrageen Sea Weed Safe to Eat?

After doing a little research, in a 2018 US Food and Drug Administration report, it noted digesting Carrageen causes inflammation, digestive issues and even cancer.

The photograph on my blog is a serving dish filled with my favorite vanilla yogurt.  It is garnished with fresh pineapple spikes and a thinly cut black grape.

After reading up on it, I am not sure if anyone still eats Carrageen.  I did notice it is available online for purchase.  However, I did not buy or make any of the pudding.

  3. Carrageen is a delicacy in Ireland and translates as little rock or moss of the rock from Gaelic. The Irish gather this seaweed and make a pudding that has a light creamy bottom and a foamy bubbled top. It is prized for it’s health qualities and it’s briny almost spicy taste.
