A quick addition to your BBQ menu would be to include some delicious grilled vegetables.
Directions: Diagonally cut yellow squash and red or orange peppers. Toss vegetables with olive oil and dried parsley.
Grill a few minutes on each side until done. Do not over grill or the vegetables will become mushy. Place on clean plate.
My BBQ uses charcoal briquettes and the smoke from the BBQ gives the rather plain tasting squash a nice smoky flavor. Grilled vegetables can also be dipped in BBQ sauce. Squashelicious!
