These egg, bacon and cheese bagels comes together quickly. Serve them for a delicious brunch or lunch.
I made these sandwiches since I had too many eggs on hand. So, check out the easy egg recipe below.
Eggs are not only nutritious, they are also an inexpensive source of protein.
Since I use cinnamon and raisin bagels it makes the sandwiches a little bit special. They work great for a holiday breakfast and get you out of the kitchen quickly.
Ingredients for Egg, Bacon and Cheese Bagels
- 3 Cinnamon and Raisin Bagels
- 6-7 Large Eggs
- 6 Slices of Bacon
- 3 Slices of Cheddar Cheese
- 2 Oranges
- Sprigs of Fresh Rosemary Herb
Directions
- Slice and toast bagels in toaster. Use the bagel setting if your toaster has one.
- Scramble eggs in a large skillet coated with non stick spray or a pat of butter.
- Fry or microwave bacon slices until done and crisp.
- To assemble sandwiches, evenly divide scrambled eggs between the three bagels and top with one slice of cheddar cheese. Place the sandwiches in the microwave until the cheese is melted. Do not microwave the tops of the sandwiches or they will become soggy.
- When cheese is melted, plate each sandwich, add two slices of bacon in a crisscross pattern.
- Garnish each plate with orange slices and a spring of rosemary. This recipe makes three servings.
